A Tea & Oranges journey across the wheat fields, forests, grasslands and deserts of Northern China. This tasting menu travels from province to province, with each course telling the story of a different region through one of its defining dishes.
Menus evolve throughout the year to reflect the seasons while always remaining true to the spirit of each region.

Beijing is one of the world’s great food cities and yet its everyday cooking remains largely hidden. This Supper Club is the chance to discover something new.
Supper Club 3A Chun Bing Lunch

You might know ‘spring rolls’ (or chun bing) as a Chinese takeout favourite, deep-fried and served as a starter. But the inspiration came from Beijing’s steamed and paper-thin wheat pancakes, peeled one by one, stuffed at the table with whatever you like - braised meats, veggies, sharp pickles and stir-fries.
Put the chopsticks down and get stuck in with hands. This is casual, Beijing-style eating at its most fun.

Pot-cooked pork & soy-pickled radish
Stir-fried pork with scallions
Seasonal stir-fried vegetables
Shredded green beans with garlic
Egg with ‘grandma’s pickles’
